Cheesy Pancakes

Cheesy Pancakes
Makes 6-9 small pancakes

1 cup whole wheat flour
1 tablespoon baking powder
1 egg
1 1/4 cup milk
2 tablespoons oil
1/2 cup shredded cheese (cheddar and Monterey jack are our faves)
Butter or oil for frying

Preheat a griddle over low-medium heat.

Combine dry ingredients in a small bowl. In a large bowl whisk together the wet ingredients. Add the dry ingredients to the wet and mix until most of the lumps are gone adding the cheese as you mix. Don't over mix or the pancakes won't be nice and fluffy.

Cook and eat.

Ok, ok...for crispy, golden pancakes use butter and medium flame being careful not to burn them. For softer pancakes use a lower heat. Turn when bubbles start to form on the uncooked side. Cook another minute or so then serve. We like maple syrup. Lots of maple syrup.
